Matcha is a Japanese green tea, finely ground. This powdered green tea has traditionally been used in the Japanese tea ceremony. Matcha is made using pure luxury grade Tencha leaves, a tea variety that is shaded a few weeks before plucking. The shading forces the plants to produce a higher chlorophyll content, which gives the leaves a rich green color and high level of antioxidants.

Matcha is made using pure luxury grade Japanese green tea Tencha leaves, a Japanese tea variety that is shaded beneath special shade covers for 3 weeks before plucking. The shading forces the plants to produce a higher than normal chlorophyll content which gives the leaves a rich green color and high level of antioxidants.
Matcha is prepared in a bowl (chawan) and mixed with boiling water with a bamboo whisk (chasen). This matcha is tasty with frank herbaceous aromas and a slight bitterness.

How to differentiate a culinary matcha from a ceremonial matcha? Every type of matcha is composed of green tea leaves which are finely powdered with the use of a grindstone, and they all contain caffeine. Although, the color can vary, going from a vibrant saturated green, to a lighter tint or a gorgeous jade green. Matcha can be classified in different grades and specified according to aroma, texture and even where it is originated. Each type of matcha can be appreciated in its own way. Pure, with milk or to be added in a drink or dessert recipe. Here is what to ask ourselves to choose the matcha that will best fit our needs.![]() |

Hojicha Powder is, in a way, Matcha’s little brother — but the two shouldn’t be confused. They are not made from the same type of tea: one is roasted green tea with a warm hazelnut-brown hue, while the other is a vibrant green tea with bold vegetal notes. The word Hojicha, meaning “roasted tea,” has its roots in Japanese tradition. Inspired by the growing popularity of Hojicha lattes from Japan, we had the idea to create our own fine powdered Hojicha, ground in-house. We proudly embrace this artisanal grind. While it may contain slightly larger particles than stone-milled tea, we find that this format enhances the roasted flavor that makes Hojicha so distinctive.
We’ve created this more full-bodied version specifically for use in lattes and do not recommend preparing it with water alone. Matcha lovers will appreciate this new type of ground tea, perfect for enjoying any time of day. Its low caffeine content and rich roasted hazelnut taste make it especially appealing.
Notes and tips
It’s normal to see some tea sediment in your cup. The tea leaves are ground into fine particles but are not water-soluble and will settle at the bottom. To reduce the amount of sediment, strain the beverage through a fine mesh strainer.
Hot Hojicha Latte Recipe
This easy method requires no chasen (bamboo matcha whisk).
Pour 200 ml of water and 150 ml of milk into a saucepan. Add 1 teaspoon of powdered Hojicha. Sweeten to taste. Bring to a boil, whisk thoroughly, then cover and simmer over low heat for 2 to 3 minutes. Strain through a fine mesh strainer before serving in a teapot, a bowl, or your favorite cup.
